Rich aromatic cheese, slightly smaller than its popular sibling Epoisses, and its  washed in Chablis instead of Marc. This distinction gives a slightly sweet, gentler punch to the finish of Affine than the Epoisses. As it matures, the yellow-orange colour will become stronger growing from the heart of the cheese. Near to maturity, the pigmentation will be more constant, and the flavors of Burgundy will surface. The cheese is soft and can be spooned, and has a concentrated richness and a creamy texture.

This Camembert is a rind washed cheese, rubbed with salt and smeared with bacterium linens, then regularly washed in Calvados. The Cheese is then coated in fresh Toasted Breadcrumbs, which adds a lovely contrast.

When a group of Producers in the Jurancon produced a new cheese in 1971, little did they know how successful it would become. Inspired by the Trappist cheeses of bygone days, some liken it to a much milder, and more supple Epoisses. Its distinctive too... with stiking tangarine orange rind, and thin paper cover. With sides bulging, it looks ready to burst! Its rich and creamy, almost nutty and the aroma and taste much milder than youd expect. A great starting point for cheese lovers not yet ready to face the onslaught of an Epoisses or Stinking Bishop.
