More about Epoisse ... this small Burgundian cheese is one of the favourite French Cheeses, and its a top candidate as one of the most pungent French cheeses. The yeasty, farmyard aroma of Epoisses is encouraged by frequent washings in the local Brandy, Marc de Bourgogne. This gives the Cheese its own unique flavour; the paste inside smells softer and more subtle although still with a sharp tangy aroma. The flavour is deliciously rustic but also creamy and refreshing with sour lemons lingering on the palate. Epoisse is smelly, tasty and very delicious, its great on a French Cheeseboard with Bleu d’Auvergne, Valencay, Explorateur, Tomme de Corse and Banon.

A little bit of Epoisse History ... Epoisse De Bourgogne arrived on the scene during the 16th century by Cistercian Monks. Napoleon was intriqued by this alcohol laden, complex cheese. Production continued until World War Two and stopped due to the war. It was revived by an Epoisses (France) resident named Berthaut. Epoisses is a 50% fat, cow's milk cheese that is washed in Marc de Bourgogne, a local alcohol. The combination of salt and alcohol help make this cheese a creamy, sweet, pungent, grassy, barnyardy, spreadable complex cheese.


The Epoisse Fabrication process ...

As soon as it arrives in the cheese dairy, the whole milk is heated to a temperature of about 25 to 30 °C in order to be subjected to a gentle maturation. The slow lactic coagulation of the cheese lasts for 16 to 24 hours. The fragile curds are left to drain in perforated moulds, and the liquid or whey runs off freely, so that the straining occurs naturally.
After a minimum of 48 hours and two turnings, the cheese is taken out of the moulds and salted with dry salt. It is then placed on racks in a cool, ventilated drying room.  

Once dried, the cheeses are taken into cool damp cellars to mature slowly. Each cheese is then rinsed between one and three times per week in water to which increasingly higher quantities of Marc de Bourgogne have been added. (Marc de Bougogne is the Spirit produced after pressing Grapes.) Once the juice has been pressed out, Marc is the process of distilling the pips and skins left in the press after juice has been extracted from wine grapes. Some producers use the stalks, too, but they can add an off-putting strawlike flavor. Properly speaking, marc is the mass of pulpy leftovers; officially, the distillate is eau de vie de marc, but people call it marc for short.  It is identical to the grappa produced in Italy, except in one respect: unlike grappa, it is aged in wood, taking on a rich, tawny color. (This being France, there is an exception to the rule: marc de gewürztraminer, made in Alsace, is clear, like the clear fruit eaux de vie of the region. It is usually drunk ice-cold, again like fruit spirits and unlike other marcs.)

During the maturing process, yeast and red fermenting agents contribute to the development of the cheese's aromas and flavours, and give it its unique orange-red colour. Epoisses requires 5 to 6 weeks maturing with regular and attentive care.

So to return goods, we need to give you a Return Merchandise Authorisation (RMA); please dont send anything back without contacting us, and obtaining an RMA.

Refunds ... The Cheese and Wine Shop of Wellington offers a full refund on all goods that you may be dissatisfied with (this includes Sale items). Customers who send back unwanted goods that are not damaged will receive the value of the item purchased less the delivery costs.
 
Unsuitable or defective items may be returned for refund or exchange providing they are received within 7 working days of the original delivery date in brand new, unused condition, in the original undamaged packaging (with labels intact, including hygiene strips)

Please ensure that your return is accompanied by a note stating your name, address, email address, contact telephone number, order number, RMA and the reason for the return and what refund/exchange you require. (As agreed in the RMA)
 
We will consider the overall condition of the product being returned when making a refund. As soon as we receive your goods we will process your request for a replacement item or refund. We will notify you via email as soon as your request has been processed.
 
You will need to pay the cost of returning goods to us, unless the goods are defective in which case you will receive a full refund including your postage and packaging costs. Proof of return and postage will be required should an item be lost in transit. Neither refunds nor replacements can be made until such proof is provided. We strongly suggest you get a Certificate of Posting from the Post Office when you send an item back.

All refunds are applied to the credit/debit card used to make the original purchase unless otherwise notified. Refunds will be furnished within 30 days of the agreement to refund.
 
If you have requested a refund, or replacements of a lower value than the returned goods, a refund will be credited back to the card used to pay for the original order. We will let you know as soon as the refund has been processed.

If you have requested replacements of a higher value, you will need to contact us to make the additional payment.
