Galbani Bel Paese Cheese 25g

Not to be confused with the stronger and harder gorgonzola picante.  Sublime drizzled with acacia honey, or just spooned onto our crusty breads or Biscuits for Cheese! As it ages it becomes softer and almost runny ... ideal for spreading, but can be difficult to cut neatly..... BUT it more than makes up for it in flavour!

Pecorino Rosso

A beautiful Italian sheep's milk cheese, with a firm smooth texture, and a sweet full flavour. The Tuscan ewe, or pecora, enjoy fragrant green pastures and produce a lovely rich milk. Matured for two to three months, the rind is rubbed with tomato paste and olive oil.

Pecorinio Toscano is a unpasteurised farmhouse made cheese from a small hillside farm not far from the coast. The smooth outside crust is rubbed in olive oil and matured for between 6 months to one year. The taste is nutty, earthy with a hint of sweetness.

Taleggio

Taleggio is a Lombardian soft cheese, with a highly pronounced and penetrating aroma. It is flat cheese, and has an aging period of more than two months which gives it its "soul". It is soft and buttery with a very aromatic flavour an a reddish crust, is creamy, with supple texture, thin pinkish rind and an unusual yeasty flavour. Delicious on the Cheeseboard, its also a wonderful cooking cheese, providing a great flavour, and a nice "stretchy" texture.
