"My husband is a dairy farmer. We milk a herd of pedigree Holstein cows and we farm right on top of the Mendips, overlooking Glastonbury Tor. People are interested in local food and quality. We did some research and people said, ‘Life’s hard enough, give us indulgence! And underpin it with provenance.’ Our ice-cream is very creamy. We use our own milk and cream and we buy as many local ingredients as possible – honey, raspberries – and we try to keep in season".
