THE NEWT ICE CYDER 37CL 8%

This Ice Cyder is produced by Babylonstoren on their Somerset estate, The Newt. It is the apple version of Canadian Icewine, made by simulating the freezing conditions under which grapes are harvested. The freshly-pressed juice of Somerset cider apples is frozen, and then slowly thawed allowing the separation of syrup-like, super-concentrated juice. This is then cold-fermented into a deliciously rich sweet cider. An extremely rare product due to the costs and care that go into the production of this high-quality drink.

With aromas of citrus fruits, tangerine, grapefruit and fragrant hedgerow flowers. In the mouth it is sweet with orange blossom, ripe quince and honey flavours yet balanced by fresh citrus zestiness which supports a super long finish.

An amazing companion to desserts. Total sugar content is 150g/L, similar to a sweet Tokaji in both sweetness and balance.
