Ayala Champagne

Ayala Champagne is available here at The Cheese and Wine Shop; it is one of the original twenty-six Grandes Marques Champagne Houses. The history of Champagne Ayala dates back to 1860, when Edmond de Ayala received the magnificent Chateau as the dowry for his wedding. 

Ayala were pioneers in introducing a drier style of wine during the second half of the 19th century. Located in the heart of Aÿ Grand Cru, Champagne Ayala, today, it remains the archetype of a great and historic House, producing top quality wines which are enjoyed throughout the world for their freshness and elegance.

In 2005, Champagne Ayala was acquired by the Bollinger family, who began a series of investments and improvements. A rejuvenated image for the House was unveiled in 2014, which draws on the Art Deco heritage of the brand. Ayala Champagnes have long been favourites of monarchs and Bright Young Things, with the 1920s and 1930s being a Golden Age for the brand.

Caroline Latrive, Cellar Master since 2011, carefully ensures that the House style is maintained by focusing on quality and creating wines that are renowned for their precision, delicacy and exquisite quality. 

Using a preserved savoir-faire, each cuvée expresses the elegance of Chardonnay and embodies the singularity of a place where everything is crafted on-site with a unique diversity of crus from Champagne’s vineyard. Truly caring for a great diversity of Terroirs, the House continues to perpetuate his founder’s vision.
