Handmade by Chris and Clare Moody on their farm and named after the family home, The Rosary. This is a young, fresh cheese with a mousse like texture and a fresh clean flavour with hints of lemon and background notes of goats milk. It is slightly sharp, and has a gorgeous creamy texture that offsets this. superb.
The ash does not flavour the cheese, and if you are wondering where the ash comes from - it is purified burnt coconut shells.

What to drink with Rosary Ash Goats Cheese? We recommend one of our Sauvignon Blanc, a classic pairing. Loire Valley wines like Sancerre or Pouilly Fumé are ideal, offering citrusy and herbal notes that complement the cheese’s freshness.
Dry Riesling: A crisp Riesling with high acidity is a strong match, as its citrusy undertones complement the lemony flavor of the cheese.
Crisp Rosé: A dry Provençal-style rosé is an excellent match for young goat’s cheese.
Sparkling Wine/Champagne: The acidity and bubbles help cleanse the palate. An English sparkling wine is also a recommended option.
Other Whites that will work well incluse our Pinot Grigio, Albariño, or one of our Unoaked Chardonnays; all are good choices.
Feeling adventurous, try it with Somerset Cider Brandy or Calvados, as apple brandy is considered a match for the cheese, complementing its tangy profile.
