Crafted from sun-dried grapes, this deep red wine boasts a charming and persistent character. Grapes are grown in western sicily on terra grande soils, a silty and clayey base rich in minerals. Vineyards sit at altitudes from sea level up to 200 meters, benefiting from the region`s warm temperatures and cooling winds, which preserve freshness and aromatic intensity.

Winemaking; the grapes undergo a slight drying process in the sun, concentrating flavours and transferring aromatic compounds from the skins to the pulp. Fermentation is long and thermo-regulated, followed by 4 months of aging in wood to add structure and complexity.

Tasting note; deep red in colour, passimora expresses delicate aromas of red fruits and pomegranate, complemented by sweet notes of dried plum and candied fruit. The palate is soft, warm, and persistent, with gentle tannins that provide balance and elegance.

Food matching; with notes of red fruit, pomegranate, and dried plum, it pairs perfectly with cured meats, our cheeses, and stews.

Cheeses to enjoy with Pelligrino Passimora; Our recommended Cheese Pairings are,
Aged Cheeses (Hard): The wine's robust nature complements the strong flavors of aged cheeses.

Parmigiano Reggiano: Its savory, complex, and nutty notes provide a delightful contrast to the wine's fruitiness.

Pecorino Romano or Aged Pecorino Toscano: The saltiness and sharp character of this cheese balance the full body of the wine well.

Our Aged Cheddars: The tanginess and flavor of The Cheese and Wine Shops aged cheddars are an excellent partner for most red wines, including Passimora.

Aged Gouda: Its caramelized, nutty flavors contrast beautifully with the wine's rich fruit notes.

Creamy Cheeses, like our Delice de Bourgogne: The wine's structure and fruitiness cut through the richness of high-fat cheeses, balancing the palate.

Triple Cream Brie or Camembert: These rich, creamy cheeses are well-matched by the wine's bold character, creating a balanced and decadent experience.

Gorgonzola; For a more adventurous pairing, a creamy, mild gorgonzola provides an interesting sweet-and-savory contrast, as the wine's robust nature can handle the blue cheese's intensity.

Matured in stainless steel, no oak is used, allowing for a pure and intense taste.
