The Lustau Pedro Ximénez San Emilio Solera Familiar 37cl is a rich, sweet, dark dessert sherry from Spain, made from sun-dried Pedro Ximénez grapes, offering intense flavors of raisins, figs, and molasses, balanced with notes of coffee and oak.
Aged oxidatively in a solera system for intense sweetness and a velvety, long finish, perfect for desserts or blue cheese.
TASTING NOTE: This Pedro Ximenez is a distinctive black/brown colour in the glass, almost tar-like in appearance. On the nose: luscious, intense aromas of dried fruits (fig, raisin, dates) as well as some molasses, treacle and mixed nuts, all of which are classic for Pedro Ximenez when made in this style.
On the palate: a full-bodied, very sweet wine! It has a lovely smooth, plump, dried fruit palate with an extremely long finish, full of caramel, fig and brazil nuts. As well as being sweet, it’s also a fortified wine meaning its alcohol was boosted to 17%.
The result is a sublime, heady, delicious wine and a real treat!
Cheese wise, Lustau Pedro Ximenez is a perfect companion for our strong blue cheeses.
The saltiness and pungent notes in blue cheese provide the ultimate counterpoint to the wine's intense sweetness.
Think The Cheese and Wine Shops Cashel Blue, Colston Bassett Blue Stilton and Roquefort. Cabrales, a Spanish blue made from cow, goat, or sheep's milk, offering a "fiery" contrast to the wine. Gorgonzola Dolce is another to enjoy, as the creamy blue pairs well with the wine's rich, velvety texture.
Other Recommended Cheeses include our 12 Month Manchego, the sharp, salty, and firm Spanish sheep's milk cheese provides a savory contrast. Our Aged Gouda, as its nutty, caramel-like notes complement the dried fruit in the wine.
Truffle-infused Cheeses: A hard, mature cheese with added truffle can stand up to the intense flavor, so our Cheddar Gorge Truffle Cheddar is the one here.
Serving Tips for Lustau San Emilio; Enjoy this Sherry lightly chilled (10–12°C or 50-54°F).
Pairing Add-ons: Enhance the board with walnuts, dried figs, dates, or dark chocolate.
For a unique, rich dessert, pour the Pedro Ximénez over blue cheese, or serve it with vanilla ice cream. Its also ideal as a digestif.
