LE CHAUDRON MARIE VACHERIN MONT DOR @375G

This famous seasonal cheese is produced from the summer milk of the cows, who in the past didn`t yield enough milk to make comte, so the farmers developed a small cheese to fit the low milk yield.

This delicious cheese is made both in Switzerland (under the name of Vacherin Mont D`or) and in France (under the name Mont D'or or Vacherin du Haut-Doubs).

The Vacherin has to mature very slowly to coax out all the intricate flavour and to end up with a creamy rather than runny paste. The paste is covered with a wrinkled reddish rind, covered with a downy white mould, and its flavour is very creamy and nutty.
