This is a wonderful soft Blue Cheese, more in the style of Dolcelate or a St Agur. Its a kind of very creamy Stilton. Produced for the Oxford Cheese Company, its made in Burford, Oxfordshire.
Quite high acidity makes it a tricky cheese to match wine with. Suggest a Pinot Noir, or your favourite Port!
