Our whisky-making process starts with creating the best possible craft beer, a beer that you would love to drink and that would not be out of place on tap at the best craft beer bars in the world. Next, we distil using Jackson, our handmade copper pot still. Finally, the young whisky is aged in used oak barrels in the shadow of St Michael?s Mount. (To brew is to prepare a beer, ale, stout, etc. by steeping, boiling and then fermenting or by infusing into hot water. Whiskey is not brewed, but rather, it is distilled. Distilled alcoholic beverages are made from fermented grain mash (a porridge-like substance). NOSE; Honeyed grains with a slight hint of caramel. PALATE; Fresh and smooth on the palate with vanilla and almond undertones and a very slight hint of marzipan. FINISH; Lingering notes of vanilla. The vanilla grainy flavours end with a sharpness that gave me an idea. This is an absolutely fantastic accompaniment to a strong salty cheese. An extra mature cheddar or a stilton would be perfect. The sharpness and the saltiness cut through each other very well and make this a lovely after dinner cheeseboard whiskey! Hell's Stone whisky is distilled using Pocketful of Stone's handmade copper-pot still named; Jackson. The resulting whisky is aged in used oak barrels in the shadow of St Michael?s Mount, bottled in Cornwall at 40% ABV.
