This delicious unpasteurised cheddar is hand made by one of nine skilled cheese makers on the Quickes farm in the heart of the West Country. Its complex & robust flavour is derived from a year spent in cloth wrapped cylinders on wooden shelves. It is allowed to breathe as it matures and forms an old fashioned rind. This makes it a perfect example of this most English of cheeses.
