CASHEL FARMHOUSE BLUE
Cashel Blue was Ireland's first farmhouse blue cheese. It is all made on the dairy farm of Jane and Louis Grubb near Cashel in Co. Tipperary Ireland.
The Grubb family have farmed their herd of Fresian cows in the Suir Valley in Ireland for hundreds of years and it comes as no surprise that, having access to some of the richest pastures in the country, they have been able to patiently craft Ireland`s most famous cheese.
Cashel Blue cheese, when young, is firm textured and crumbly, but with ripening it takes on a soft, creamy, almost spreadable texture. As it matures, the flavour also changes, growing stronger and becoming spicier.
The rind is very distinctive with a covering of grey and pink moulds. Awards Won; Won Best Blue at British Cheese Awards 2024 Won Best Irish Cheese at British Cheese Awards 2024 Won Reserve Champion at The British Cheese Awards 2024. Awarded bronze at The World Cheese Awards 2019. Won gold at the Irish Cheese Awards 2017 in the Blue Cheese category.
