The Mont d'Or takes its name from the highest mountain of Doubs which culminates at 1463 meters above sea level. Its origin is very old. In the fall, the herds returned to the stables after spending the summer on the highland pastures. As the production of milk became less and did not make it possible to make a gruyere wheel, the farmers had the idea of making a small cheese. That's why Mont d'Or remains a seasonal cheese that is made from August 15 to March 15.

Vincent Tyrode`s Vacherin is produced in Switzerland, and his Vacherin Mont d’Or uses the fattier, richer milk, and is then aged so its unctuous, rich, piney flavours develop fully.  The cheese is encircled in spruce bark, which stabilises the cheese, and imparts a resinous flavour.

Washed frequently for three weeks, it is then crimped into a box, forming its wrinkly rind. Sold generally from eight weeks onwards, it is rich, hedonistic and a essential seasonal cheese. 

What to drink with Vacherin? Some Enjoy Vacherin with Champagne, or other crisp white wines like our Chablis, or Hugel Riesling. Gewürztraminer also works well with Vacherin: Its full body and aromatics stand up to the strong flavour of the cheese.

Prefer a Red, then enjoy Vacherin with one of our Beaujolais: A fruity and light Beaujolais, Gamay based, is a good pairing. As is one of our Pinot Noirs, choose a light-bodied Pinot Noir with high acidity will also work well.
