SOMERSET GOATS BRIE WEB PARENT
This wonderful goats milk, Brie styled, cheese is made from pasteurised goats milk at The Lubborn Creamery here in Somerset.
The cheese is made from the goats milk collected from local farms within a few miles radius of the creamery and is situated in the beautiful valley of Cricket St Thomas. Capricorn Goats cheese was first created in 1983 and, since then, has won an outstanding 43 awards, including; Best Goats Cheese at The Nantwich International Cheese Show in 2016.
It won because of not only its taste but also its highly unusual square shape. It has a rich and creamy taste thats very popular, and isnt too goaty! A feature of all goats milk cheeses is their almost bright, white colour. This is due to the fact that goats milk contains virtually no carotene.
Ingredients: Pasteurised Goats Milk, Salt, Rennet, Starter Culture, Mould Cultures, Calcium Chloride Vegetarian rennet, as opposed too, animal rennet is used in the production of the cheese thus making Capricorn suitable for vegetarians. The cheese ripens from the outside towards the centre and during this maturing process, the cheese is gently sprayed with salt. So, within approximately ten days, an identifiable edible white coat or bloomy rind grows on the cheese. After which it is wrapped in breathable material to allow it to ripen further.
