After six months of soaking their neighbours blackcurrants in Somerset Cider Brandy Cos own Apple Eau de Vie, they are drained and pressed to create a concentrated blackcurrant liqueur with remarkable depth and crispness. With a farm consisting of over 180 acres of apple orchards, Julian Temperley has been distilling brandy and making cider at Somerset since 1989 when he was granted the UK's first ever cider-distilling license.
Cider production in the UK dates back to the Romans, but the West of England in particular has a number of PGIs - protected geographical origins - where the orchards are treated like Burgundian vineyards, each with its own particular terroir.
The blackcurrant liqueur is made by using apple eau-de-vie as a base for macerating the blackcurrants, creating a cassis with incredible freshness and vibrancy.

Époisses or Oxford Isis: This is a traditional and highly recommended pairing, often served on toasts with the liqueur. Soumaintrain: Another Burgundian washed-rind cheese that pairs perfectly with the regional liqueur.
Vacherin Mont d'Or: A seasonal, soft, and rich cheese that is an excellent partner.
Brie/Camembert: Mild French soft cheeses also work well and can be served with blackcurrant jam or the liqueur itself.
Sharp & Crumbly Cheeses: The sharpness and saltiness in hard or blue cheeses provide a strong contrast that stands up to the robust fruit flavor.
Sharp Cheddar: A vintage or aged cheddar (like our Cheddar Gorge Extra Mature, Montgomery Cheddar provides a rich, crumbly texture that contrasts well with the fruitiness.
Lancashire or Wensleydale.
Blue Cheese: Strong, salty blue cheeses like Devon Blue, Stilton or Roquefort create an excellent sweet/sour/salty combination.
Goat Cheese: The clean, tangy flavor of goat cheese provides a refreshing contrast to the sweet liqueur.
