An outstanding Chablis from one of the region's finest producers. Care and attention to detail is one of the hallmarks of William Fevre and it certainly shows in their Domaine Chablis.
All the fruit for this wine is hand-harvested and lightly pressed to maximise freshness, with about 10% of the wine vinified and aged in French oak barrels to provide great texture and complexity. It has aromas of citrus fruits and green apple leading on to a dry, supple palate with vibrant fruit, mineral flavours and a fresh, clean acidity.
William Fevre Chablis combines lovely fruitiness with an attractive freshness and creaminess leading to a finish full of great acidity. Domaine William Fevres vineyards sit on Kimmeridgian subsoil and enjoy ideal exposures to produce a very fine wine.
he Chablis region is 3,100 hectares stretching from the extension of the Premiers Crus to the neighbouring communes. The soil in this region is chalky clay, marl, and marly limestone from the Kimmeridgian era (the upper Jurassic geological period, 160-140 million years ago). Located on either side of the Serein River.
The subsoil in this region is rich in minerals and oyster fossils, giving the mineral character typical of the wines of Chablis.
