BREBIROUSSE D ARGENTAL
Brebirousse d'Argental is a delightfully soft sheeps milk cheese with an orangery-red rind and a deep rich flavour. When you first taste this cheese the intense creaminess and gooey texture soon give way to a burst of superb, deep meatiness which is unmistakably sheep. It is a fabulous combination of delicate sweetness and buttery intensity.
Made in Lyon (which is the capital of France`s Auvergne-Rhone-Alpes region).
The name Brebirousse literally means red sheep and that is exactly what this cheese is. The colour of its rind doesn`t come from the cheese being washed, but rather annatto is sprinkled over the cheese as it is maturing.
The annatto used in the cheesemaking is made from the fruit of the achiote trees. These are found in the tropical regions of the Americas. The fruit themselves are not edible but the seeds found within them are surrounded by an orangery red pulp which is mixed with water to produce food colouring.
A luscious, silky soft ewe's milk brie with a unique lactic sweetness. Ewe's milk naturally contains about twice the fat of cow or goat milk, so you'll notice a dense texture and viscous, buttery finish.
