The Cheese and Wine Shops Vacherin Mont d'Or AOC ... is a special seasonal cheese in both France and Switzerland, only available between mid-September and March. The cheese is made from the winter milk of cows who have been brought down from their pastures for the season.
It is related to other mountain cheeses such as Emmentaler and Gruyere, but made in much smaller rounds and also treated differently, so that the cheese is almost liquid when fully ripe.
This Cheese becomes almost liquid as it matures. Its ideal with one of The Cheese and Wine Shops great value Jura wines, and its also an excellent pairing with Champagne. You may also have it at the end of the meal with a sweet sherry such as a Pedro Ximenez.
