Duck Rillettes lovely with our crusty Bread. Serve straight from the dish, or turn out and slice. Duck Rillettes is a coarse pate consistency which is made by slow cooking the duck meat, seasoning it well and shredding. The shredded meat is then cooled with the fat it has cooked in to form a paste that can be spread on bread or toast when served at room temperature.
Serve alongside a confit of cranberries, green salad or gherkins. The fattiness of the duck is perfect when paired with a fresh, slightly acidic red wine such as a young Burgundy or a Pinot Noir.
