More about Tapanappa Cabernet Shiraz ... Tapanappa is the project of Brian Croser (formerly of Petaluma), Jean-Charles Cazes of Chateau Lynch-Bages in Pauillac, and Socit Jacques Bollinger, the parent company of Champagne Bollinger. Located twenty kilometres north of Coonawarra, Tapanappa’s Whalebone Vineyard is a site of enormous historical significance; taking its name from the 35 million year old whale skeleton discovered in a cave beneath the vineyard. The defining mission of the partnership is to produce Australian fine wines of distinction. These wines are taken from three distinguished sites; the Tiers Vineyard in the Adelaide Hills, the Foggy Hill Vineyard on the southern edge of the Fleurieu Peninsula and the Whalebone Vineyard in Wrattonbully, and the regions they lie within. What Tapanappa wines share is an attempt to express and market terroir – the distinctive characteristics driven by the unique site of each vineyard.

The word Tapanappa is probably derived from the local aboriginal language, and likely translates to "stick to the path”. This is exactly what this partnership intends to do, by continuing Brian’s career-long mission of selecting distinguished sites, matching the climate, soil and geology of the site to the right varieties, and fastidiously managing the vineyard to maximise quality. The partnership has the added advantage of being able to draw on the partners’ extensive "old world” fine wine experience, enhancing Tapanappa’s ability to produce unique Australian "terroir” driven wines.

Opaque dark red back colour with a dark red hue. Pronounced aromas of blackcurrant intermixed with black olives are followed by a trace of liquorice, cedary tobacco characters and spice. A sense of firmness to the mid palate, blackcurrant with flashes of liquorice are the dominate force over some dark cherries, subtle black olive infusions, cedary tobacco characters and spicy dried herbs. Solidly built tannins provide the framework with an aftertaste of blackcurrant, subtle liquorice, black olive, cedary tobacco characters and spicy dried herbs.

Tasting Notes; The Whalebone Vineyard Cabernet Shiraz has the sweet fruit core of ripe mulberry and blackberry provided by the Cabernet Sauvignon and Shiraz in the warm 2008 vintage. There is 10% Cabernet Franc in the blend that provides a floral aroma note and silky tannin texture and has a much greater influence than its small component suggests.

Food Match; Roasts, Steaks, Duck and dishes based on spring lamb lightly roasted with thyme or rare pigeon breast naturally balance and amplify the structure of this fabulous wine.
