About Long Clawson Dairy: Long Clawson Dairy was founded in 1911 when 12 farmers from the Vale of Belvoir formed a co-operative to produce Stilton Cheese in the village of Long Clawson. Long Clawson has prospered and today 56 producing members from 39 farms supply 38 million litres of milk per year......

About Long Clawson Shropshire Blue: Shropshire Blue originated at the Castle Stuart Dairy, Inverness in the 1970's where it was called 'Inverness-shire Blue' or 'Blue Stuart'. It was made by a Scottish cheese-maker, Andy Williamson who was trained in the making of Stilton in Nottinghamshire. He returned to Scotland and produced the first Scottish Blue cheeses, which included cheeses similar not only to Stilton but also to Blue Cheshire and Wensleydale. Inverness-shire Blue, or Blue Stuart, was marketed throughout the rest of the British Isles as Shropshire Blue; a name chosen simply to help its sales and acceptability.

However, in 1980 production of the cheese stopped as the Milk Marketing Board of Northern Scotland brutally shut down the creamery killing off a number of Scottish cheeses and its only blues.

The making of the cheese was however taken up by the Cheshire cheese maker Elliot Hulme and Harry Hanlin along with the help and advice of Charlie Chisholm, who worked at the Castle Stuart Dairy. The first Shropshire Blue from the farm then appeared at the Nantwich show in 1980. However, soon after this they too also stopped making the cheese. 

Fortunately, the making of the cheese moved to Nottinghamshire when Long Clawson Dairy and Colston Bassett Dairy took up production. An ironic return to the area of Shropshire Blues real birth-place in the early years of the creators life, Andy Williamson.

Shropshire Blue has a flavour somewhere between Blue Cheshire and Blue Stilton, a creamy orange coloured paste with blue-green veining; annatto produces the orange colour and Penicillium roquefortii produces the veining. The cheese is essentially an orange coloured Stilton style cheese. It is made from pasteurised cows' milk and using rennet suitable for vegetarians. The cheese is matured for 12 weeks but it can be matured for a further 12 weeks to produce a creamier fuller flavoured cheese. Shropshire Blue is excellent throughout the year.

From beneath a dusty, natural rind, the paste shines forth with an annatto-infused, crocus-yellow paste, mapped with rivulets of blue-green mold. This dense and fudgy wheel hails from Nottinghamshire, and it's moderately salted, with Stilton's approachable, mellow flavor. The paste is more mineral and earthy than tongue-tickling spice, and pairs perfectly with Port.

Each cheese is approximately 20cm in diameter, 30cm high, weighs 8kg and has a fat content of 48%. It is excellent on the cheese-board and is also very versatile in the kitchen; it makes fabulous soups and sauces. It is best accompanied by good English brown ale and as with Stilton, by one of our fortified wines.

Regardless, we want to make sure we put them right as quickly as possible. So to return goods, we need to give you a Return Merchandise Authorisation (RMA); please dont send anything back without contacting us, and obtaining an RMA.

  5. Please provide as much information as possible as to why the product/s are unstaisfactory
  6. await our reply (if we havent replied within 48 hours, please call to ensure we have received your request)

Refunds ... The Cheese and Wine Shop of Wellington offers a full refund on all goods that you may be dissatisfied with (this includes Sale items). Customers who send back unwanted goods that are not damaged will receive the value of the item purchased less the delivery costs.
Unsuitable or defective items may be returned for refund or exchange providing they are received within 7 working days of the original delivery date in brand new, unused condition, in the original undamaged packaging (with labels intact, including hygiene strips)

Please ensure that your return is accompanied by a note stating your name, address, email address, contact telephone number, order number, RMA and the reason for the return and what refund/exchange you require. (As agreed in the RMA)
We will consider the overall condition of the product being returned when making a refund. As soon as we receive your goods we will process your request for a replacement item or refund. We will notify you via email as soon as your request has been processed.
You will need to pay the cost of returning goods to us, unless the goods are defective in which case you will receive a full refund including your postage and packaging costs. Proof of return and postage will be required should an item be lost in transit. Neither refunds nor replacements can be made until such proof is provided. We strongly suggest you get a Certificate of Posting from the Post Office when you send an item back.

All refunds are applied to the credit/debit card used to make the original purchase unless otherwise notified. Refunds will be furnished within 30 days of the agreement to refund.
If you have requested a refund, or replacements of a lower value than the returned goods, a refund will be credited back to the card used to pay for the original order. We will let you know as soon as the refund has been processed.

If you have requested replacements of a higher value, you will need to contact us to make the additional payment.

Once you have a return number from us, and you need to return the goods ... please enclose your order number and ensure all items are well packaged to prevent damage. We recommend using a tracked service to ensure they reach us.
