About Colston Basset Blue Stilton ...
Colston Bassett Stilton is produced with the curd being hand ladled before draining, which means the curd is handled gently and thus preserves its structure. Bottom line is a Stilton with a luscious, creamy texture when the cheese matures. The paste is crumbly when young, softening and darkening at the rind as it matures. It is a lovely creamy ivory colour with well-spread blue veining growing from the centre outwards. The aroma is sharply nutty and the flavor is full of mellow nuts and fruit. The flavor strengthens as it matures, hence the title, The king of cheeses!
Especially good at Christmas, this is a real seasonal treat which has the same wonderful characteristics as its larger relation, but in a nice baby Truckle presentation, perfect for the festive season.

About the producer; Colston Bassett ...
The village of Colston Bassett lies near the Nottinghamshire/Leicestershire border, in an area known as the Vale of Belvoir. Many villages in this area had small Stilton dairies in the nineteenth century, most of which have now disappeared.
For almost a centrury, Colston Bassett and District Dairy has been making the finest quality Blue Stilton, "King of Cheeses". A highly skilled, dedicated and experienced team use the same time honoured recipe and methods used by generations to make this unique, award winning cheese, every day taking the milk from the same pastures and the same farms that founded the dairy as a co-operative in 1913. Colston Bassett, a rural village in the heart of the English countryside, has become famous to lovers of fine cheese worldwide, and The Cheese and Wine Shop is proud to carry this "King of Cheeses".
