Bollinger is one of the few family-owned firms remaining in Champagne. Their non-vintage Special Cuvee has a high proportion of Pinot Noir, 60%, with 25% Chardonnay and 15% Pinot Meunier, all from top vineyards.
About 50% of the wines blended into the Special Cuvee are barrel-fermented in old barrels, lined over the years by tartrate crystals, to give the wine toasty complexity rather than oaky flavour. Wonderful now, this would also mature well, given a year or two in the cool and dark
