More about Berkswell Cheese ... This cheese is a regular award winner. Handmade on their farm by Stephen and Sheila Fletcher to exacting high standards and could be compared to a good Manchego, or a Young Parmesan  in style, flavour and finish. Its delicious, with a mouth-filling flavour with hints of caramel and a definite tang on the finish. Berkswell is a magnificent looking cheese with distinctive ridges and unusual markings on its thick rind. This unpasteurized hard cheese was developed from a traditional Caerphilly recipe, but adapted and matured for four to eight months to give it unique texture and flavor. Berkswell enhances any cheese board with its striking good looks. Beautiful golden-orange rind, moulded in a unique barrel-shaped truckle and ribbed for extra pleasure!

History ... The village of Berkswell was named after a Saxon chief, Bercul. He was baptised in the ancient well at the centre of the village, and the village became known as 'Berculs Well'. Over the last thousand years, the name has evolved into 'Berkswell'. The Berkswell Cheese is made by a small family run business in the village, and takes it name accordingly!
 
Ram Hall is a sixteenth century farmhouse with very little changed from the original. Steven Fletcher started as a dairy farmer, keeping cattle for milk sales only. In the early 1980s the cattle were slowly replaced with sheep, and it was only through a quirk of fate that his cheese-making career took off.
 
A local shop which used to sell goat's cheese lost their supplier and asked Stephen if he could make ewe's milk cheese. Never one to shirk a challenge, Stephen set about the task of making a new ewe's milk cheese from scratch. Originally made using a recipe for Caerphilly, Berkswell soon developed a character of its own, more along the lines of a Manchego than the Welsh cheese.
 
Stephen now has the help of his wife Tessa and the cheese is made 2-3 times a week from the milk of their flock of 350 Frieslands. Its distinctive shape is due to the curds being left to set in Salad Spinners!
 
This cheese goes well on the cheeseboard as well as being an excellent cooking cheese, with a more delicate flavour and smoother texture than say, our Pecorino. It grates well and is wonderful in potato dishes. It is also a good alternative to cheddar for those suffering from cow's milk allergies.
 
Berkswell is close textured and is 'silky', full, rich and sweet in flavour. It is frequently compared favourably with our mature Pecorino. The cheese is hard and chewy, almost granular. Each bite reveals more of its complex flavors. With hints of roasted nuts, caramelized onions and meadow flowers with prickly tang. It can be enjoyed on the cheese board or for grating and also in soups...  with its wonderfully clean, firm bite, it is sweet and nutty with a hint of caramel with a definite tang on the finish. Its firm texture also makes it ideal for grating for use in recipes.

We want you to be completely satisfied with our goods. However, despite our best efforts, things do go wrong, parcels do go astray, or perhaps its not the right colour. Regardless, we want to make sure we put them right as quickly as possible. So to return goods, we need to give you a Return Merchandise Authorisation (RMA); please dont send anything back without contacting us, and obtaining an RMA.

To Return Goods, and get a RMA

If you want to return goods to us ...

  1. please log in to your account
  2. under Orders, select the Previous Orders tab.
  3. from there, select the relevant order number
  4. click on the RMA link, which is towards the right hand side
  5. Please provide as much information as possible as to why the product/s are unstaisfactory
  6. await our reply (if we havent replied within 48 hours, please call to ensure we have received your request)

Refunds ... The Cheese and Wine Shop of Wellington offers a full refund on all goods that you may be dissatisfied with (this includes Sale items). Customers who send back unwanted goods that are not damaged will receive the value of the item purchased less the delivery costs.
 
Unsuitable or defective items may be returned for refund or exchange providing they are received within 7 working days of the original delivery date in brand new, unused condition, in the original undamaged packaging (with labels intact, including hygiene strips)

Please ensure that your return is accompanied by a note stating your name, address, email address, contact telephone number, order number, RMA and the reason for the return and what refund/exchange you require. (As agreed in the RMA)
 
We will consider the overall condition of the product being returned when making a refund. As soon as we receive your goods we will process your request for a replacement item or refund. We will notify you via email as soon as your request has been processed.
 
You will need to pay the cost of returning goods to us, unless the goods are defective in which case you will receive a full refund including your postage and packaging costs. Proof of return and postage will be required should an item be lost in transit. Neither refunds nor replacements can be made until such proof is provided. We strongly suggest you get a Certificate of Posting from the Post Office when you send an item back.

All refunds are applied to the credit/debit card used to make the original purchase unless otherwise notified. Refunds will be furnished within 30 days of the agreement to refund.
 
If you have requested a refund, or replacements of a lower value than the returned goods, a refund will be credited back to the card used to pay for the original order. We will let you know as soon as the refund has been processed.

If you have requested replacements of a higher value, you will need to contact us to make the additional payment.
 
Sending Goods back..

Once you have a return number from us, and you need to return the goods ... please enclose your order number and ensure all items are well packaged to prevent damage. We recommend using a tracked service to ensure they reach us.
