FORD FARM CHEDDAR
Ford Farm's cave-aged cheddar is made in their dairy in Dorset, and matured in the famous Wookey Hole cave here in Somerset. Maturing cheese in caves is nothing new, and is a key factor in one of Frances most iconic cheese, Roquefort, which is aged in the caves of the Combalou mountains.
Cave ageing allows the natural moulds to grow faster with the higher humidity providing a mellowing effect.
