To produce this honey, Mauro keeps about fifty hives in the traditional citrus growing area of piana di Sibari, on the coast of Calabria in southern Italy, which are looked after by a fellow beekeeper.
From late March to early May the bees collect the nectars of the perfumed citrus flowers to make this speciality honey from south Italy, known as zagara.
