Somerset Brie is creamy with a mild, fresh flavour and a soft edible white rind. The curd is the colour of straw, as it ripens from the outside in, it becomes softer, richer and with a fuller flavour.
About the producer .... The Lubborn Creamery is situated in the valley of Cricket St Thomas, here in Somerset. The valley has ideal soils and a good rainfall producing lush sweet grazing.
A new creamery was built at Manor Farm in 2002, not far from the site of the original creamery.
Lubborn pioneered the craft of making Brie style cheeses in this country. By using an authentic cheese making method, an insistence on quality and sourcing locally produced milk, Lubborn soft cheeses typically have a full and yet fresh flavour.
