Made using local certified organic, high density durum wheat from the unspoilt Orcia Valley in southern Tuscany. The quality of its texture and flavour is due to the superior high protein organic wheat used, bronze extrusion of the pasta and slow drying at low temperature.

Spaghetti alla Chitara literally translates as guitar spaghetti. They are so called, not because the coiled spaghetti looks like guitar strings, but because in the past it was cut by forcing the dough through taut wires. Hence the spaghetti is square and not round.
