Martelli maccheroni is produced by a family-run business located in the small medieval village of Lari, near Pisa. Using traditional methods, which translates to slowly kneading hard durum wheat semolina, pressing it through bronze moulds to create a porous surface and naturally drying it for two days! Result? Artisanal Italian macaroni pasta, distinguished by its rough, porous texture which sauces cling to.
