More about Brie Truffle ... when the cheese is very young it is cut horizontally and a layer of truffle mixed cheese is applied. The top is put back on and the cheese and it is left to mature. Its bloomy white crust starts to mottle as the cheese ages, it’s at this stage the interior is at its soft and sumptuous best. The flavour is rich and decadent with the unmistakable flavour of truffle influencing the creamy soft buttery nature of this Brie.
