Applewood Smoked Cheese

Produced by the Ilchester Cheese company, who describe this cheese as “… a traditional farmhouse Cheddar with a delicate smoky flavour and a lovely smooth texture, all finished with a dusting of paprika for good measure.” This cheese is moist, not a dry and crumbly cheese like many cheddars. It slices very well and melts easily, making it perfect for grilled cheese sandwiches or hamburgers.

From Rachel Stephens of Stockbeare Farm in North Devon, this is a full fat hard cheese based on a traditional 17^th Century recipe. Its around 3 months, and is light and buttery, with full flavour. Devon Oke is the same cheese, unwaxed but matured for longer, whilst Belstone is their vegetarian version, and is available in a 1.2+kg or 2.4+kg format.

Quickes Cheddar Unpasturized

Quicke's Traditional Mature Cheddar is handmade on the farm in Exeter, just over the border in Devon. This Quickes handmade traditional cheddar Truckle is matured for around 9 months. By wrapping each Truckle in muslin, the cheese is allowed to breathe as it matures, forming the old fashioned rind that is the hallmark of traditional cheddar. At this age, it is a full-bodied, buttery cheese that is quite sharp and utterly divine.
