Dorstone is a lovely Ash covered Goats Cheese made by Charlie Westhead at Neals' Yard Creamery. Its named after the Herefordshire village, close to where the cheese is made. The goats' milk cheese itself is coated in ash, and then ripened in a mould that leads to a faint veining reminiscent of marble! The curd is snowy-white, the texture soft and mouse-like, with the flavour mellow and creamy.
